Bellwoods Brewery Lentil Salad… it’s a meal type salad.
- 3/4 cup lentils (we like french lentils)
- 1/2 lb shaved asparagus
- 1 bunch of shaved radishes
- 2 sweet peppers (diced)
- 1/2 a red onion (diced)
- a couple handfuls of mixed greens
- 4 boiled eggs
- 1/2 cup honey
- 1/4 cup dijon
- shaved parmesan
Boil eggs, cook lentils (about 20-30 minutes) and then strain and cool, whisk honey and dijon together and toss everything but the eggs and cheese in dressing, season, top with eggs and shaved parmesan.
